Every spring, garlic scapes make an appearance at farmer’s markets. Picked out of gardens or foraged wild, these sweet and crunchy shoots pack all the immune-boosting properties of the garlic bulb but with a less potent flavor. This compound butter is perfect melted over steaks or vegetables or even spread on gluten-free bread.
Ingredients
- 1 cup, grass-fed butter – salted
- ¾ cup chopped scapes
- ½ organic lemon, juiced
Preparation
- Place the scapes in a blender or food processor until minced.
- Add the butter and lemon juice and blend well.
- Place the butter in plastic wrap and mold into a cylinder and refrigerate until hardened.
- Slice off as needed.
