Wild Blueberry and Cashew Smoothie Bowl

In a blue mood? Try this perfect antioxidant, mineral, and protein-packed start to your day! The main ingredient, wild blueberries, are known to increase the antioxidant levels in your body. In fact, blueberries are believed to contain more antioxidants than any other commonly consumed fruits. Enter raw cashews, which supply protein, fiber and several important minerals such as copper, zinc and manganese. Cashews are also linked to weight loss because they help satisfy hunger, and are rich in tryptophan, an amino acid that aids in the production of serotonin and boosts your mood. Blend them together and the result is light and creamy and a bit like having blueberry cheesecake for breakfast!

Ingredients

  • 1 c frozen organic blueberries
  • 1 organic orange or 2 clementines
  • 1/3 c raw cashews
  • 2 TB organic almond milk

Preparation

1. Soak cashews for up to two hours for a smoother consistency.

2. Combine all ingredients and blend until smooth.

3. Garnish with walnuts, flax seeds and fresh fruit.

4. Add more almond milk for a traditional smoothie in a glass.
