Watermelon Kiwi Popsicles

Stay cool and hydrated with these super refreshing pops loaded with Vitamin A, phytonutrients, antioxidants, and you guessed it…water!  An added bonus is collagen to keep your skin looking supple in the summer heat.

Ingredients

  • 1/2 medium organic watermelon
  • 2 organic kiwis
  • 1 can organic low-fat coconut milk
  • 8 mint leaves
  • Juice from 1 organic lime

Preparation

  1. Cut up watermelon into pieces that will fit into the blender.
  2. Add coconut milk, mint leaves and lime juice and blend until frothy.
  3. Pour into popsicle molds to just about a quarter inch from the fill line.

4. Peel kiwis and slice into thin cross-sections and slide two or three slices into each mold, pushing them down with a knife to the middle of the mold.

5. Freeze for 5-6 hours and enjoy!
