Truffle Oil Roasted Delicata Squash

Enjoy this fantastically delicious winter squash right now! With cooler nights and colorful leaves upon us, elevate your palate and infuse your senses with this flavorful and user-friendly squash.

Keeping it simple is the key to success with this super delicatalicous (see what we did there) recipe! And by the way, there is a lot of benefit to eating delicata squash. Feed your muscles with plenty of potassium with each serving, and benefit as well from its high dietary fiber content.

For a bonus snack, save the seeds, toss them in a little coconut oil, cayenne pepper and sea salt and roast them until crispy.

Ingredients

  • 2 small organic delicata squash, split in half, and seeded (save the seeds and roast them as a bonus)
  • 1/2 teaspoon truffle oil
  • Sea Salt & pepper to taste
  • 2 sprigs fresh thyme leaves
  • 2 tablespoons parmesan, freshly grated (optional)

Preparation

  1. Preheat oven to 400 degrees.
  2. Cut the squash in half lengthwise, and remove the seeds.
  3. Rub truffle oil over the meat side, and season it with sea salt and pepper.
  4. Remove the leaves of thyme from the steam and sprinkle the leaves over the top.
  5. Place the squash on a baking sheet, insides facing up, and bake for approximately 30 minutes (until tender).
  6. (Optional) Sprinkle the parmesan over the top and bake for an additional 5 minutes
  7. Enjoy this immediately!
