Enjoy this fantastically delicious winter squash right now! With cooler nights and colorful leaves upon us, elevate your palate and infuse your senses with this flavorful and user-friendly squash.
Keeping it simple is the key to success with this super delicatalicous (see what we did there) recipe! And by the way, there is a lot of benefit to eating delicata squash. Feed your muscles with plenty of potassium with each serving, and benefit as well from its high dietary fiber content.
For a bonus snack, save the seeds, toss them in a little coconut oil, cayenne pepper and sea salt and roast them until crispy.
Ingredients
- 2 small organic delicata squash, split in half, and seeded (save the seeds and roast them as a bonus)
- 1/2 teaspoon truffle oil
- Sea Salt & pepper to taste
- 2 sprigs fresh thyme leaves
- 2 tablespoons parmesan, freshly grated (optional)
Preparation
- Preheat oven to 400 degrees.
- Cut the squash in half lengthwise, and remove the seeds.
- Rub truffle oil over the meat side, and season it with sea salt and pepper.
- Remove the leaves of thyme from the steam and sprinkle the leaves over the top.
- Place the squash on a baking sheet, insides facing up, and bake for approximately 30 minutes (until tender).
- (Optional) Sprinkle the parmesan over the top and bake for an additional 5 minutes
- Enjoy this immediately!
