Ingredients
- 8 organic jalapeño peppers
- 2 TB cold-pressed olive oil
- 1/2 lb free-range ground turkey
- 1/4 organic yellow onion
- 1/4 tsp paprika
- 1/4 tsp cumin
- 1/4 tsp garlic powder
- Sea salt
- Black pepper to taste
- 2 TB organic tomato paste
- 1/2 cup shredded Mexican blend cheese
Preparation
1. Preheat oven to 375.
2. Using gloves, cut peppers in half. Use a spoon to scrape out seeds and ribs. Arrange on a sheet pan and set aside.
3. Heat olive oil in skillet and add onions, paprika, cumin, and garlic powder, cooking until onions are soft and translucent. Add ground turkey and tomato paste and continue until turkey is cooked through. Season with salt and pepper to taste. Allow to cool.
4. With a small spoon, fill each jalapeño half with the turkey mixture and top with shredded cheese. Bake for about 20 minutes, or until cheese is golden brown.
