This easy and super-charged pesto is perfect with your favorite gluten-free pasta or brushed over grilled chicken. Ingredients (serves 8)

  • 3 cups chopped fresh organic kale
  • ½ cup toasted walnuts
  • 2 tablespoon minced garlic
  • ½ cup grated parmesan (or less if watching your dairy intake)
  • ½ cup cold-pressed olive oil
  • Juice from one small organic lemon
  • ¼ teaspoon salt

Preparation

Place all ingredients in a food processor or blender and pulse until smooth.
