Millet and Brown Rice Porridge

Mornings are getting cooler, which means we’re craving something a little warmer than our smoothies as we head out the door. This millet and brown rice porridge provides the perfect start to your day.

Millet has a sweet and nutty flavor and is one of the few alkalizing grains. It contains more protein than rice or wheat, has antioxidant properties, and provides healthy amounts of magnesium and niacin. A spoonful of ghee tops it off with healthy fats for the ultimate cool weather glow.

Ingredients

  • 4 cups almond milk
  • 1/2 cup organic brown rice
  • 1/2 cup organic millet
  • 1 TB organic coconut palm sugar
  • 1/4 tsp pure vanilla extract
  • 1 cinnamon stick
  • 2 cardamom pods
  • Pinch of fine sea salt to taste
  • Grass-Fed ghee
  • Garnish of your choice (we love blueberries, pumpkin seeds, and pecans on this)

Preparation

  1. Pour almond milk, rice, palm sugar, vanilla, cinnamon stick, cardamom pods and salt into a saucepan and bring to a gentle boil for 15 minutes, stirring frequently.
  2. Add millet and continue to simmer for about 25 minutes, or until liquid is absorbed by the grains and mixture is thick. Make sure to stir constantly at the end so that it doesn’t stick.
  3. Fish out the cardamom pods and cinnamon stick and pour into bowls.
  4. Top with a spoonful of ghee on each serving, along with a splash of cold almond milk and nuts and berries of your choice.

Note: Makes 4 servings. Keeps well in the fridge for several days…just reheat with a splash of milk and you’re good to go.
