Not your mother’s pancakes! These POWERcakes are perfect before a workout. Made from energy packed ingredients like quinoa and almonds, these POWERcakes have that perfect blend of carbs and protein to give you the boost in endurance you need to tackle any activity you want!
Lemon Powercakes- Serves 6 (3 large pancake/serving)
Ingredients
- 2 tablespoons flaxseed
- 1 tablespoon almond flour
- 3 ½ cups water
- ½ cup garbanzo flour
- ½ cup quinoa flour
- 2 cups brown rice flour
- 2 ½ tablespoons potato starch
- 2 tablespoons baking powder
- 2 tablespoons chia seeds
- 2 tablespoons hemp seeds
- 1 tablespoon vanilla extract
- Zest of 1 lemon
- 2 tablespoons Manuka honey
- 1 ½ teaspoons salt
Preparation
- Measure and place all ingredients (except water) into a mixing bowl
- Add the water, and stir completely (make sure the batter has no dry lumps)
- Consistency should be similar to traditional pancake batter
Ready to Cook
- Heat a cast-iron skillet on medium heat and drizzle olive oil (or use a little grass-fed butter)
- Pour batter into 5 inch circles
- When bubbles form on the top, flip the pancakes and cook until golden brown on the bottom
To Serve
- Serve with pure maple syrup, or raw honey
- Garnish with fresh blueberries (or berries of your choice
