September is the time for figs! One of the oldest cultivated fruits in the world, figs are rich in phytonutrients and antioxidants. This easy and versatile fig jam lets us take advantage of all of their nutritional benefits and tastes delicious on gluten-free English muffins and toast, with cheese and gluten-free crackers, or even as a glaze on meat.
- 1 1/2 cups organic figs, chopped coarsely
- 3 TB raw honey
- juice from one organic lemon
- 1/2 organic vanilla bean, sliced open
- 1/4 cup water
1. Place all ingredients in a saucepan and heat on medium/low heat until the figs cook down and the mixture is thick, stirring very frequently, about 15-20 minutes.
2. Allow the jam to cool, discard vanilla bean pod, and spoon into a jar. Enjoy for up to a week in the refrigerator.
