Crunchy sweet potato spirals are the perfect snack or side for your next grass-fed beef burger. Sweet potatoes are high in iron and vitamins B6, C, and D. Olive oil provides healthy fats and helps crisp them into delicious twists.
Ingredients
- 2 small organic sweet potatoes
- 1 TB cold-pressed olive oil
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp paprika
- Sea salt and pepper to taste
Preparation
1. Heat oven to 350 degrees.
2. Scrub sweet potatoes with a vegetable brush. Process potatoes using the largest setting on a vegetable spiralizer.
3. Place spirals in a medium bowl and toss gently with olive oil. In a small bowl, mix dry spices.
4.Place spirals on a baking sheet lined with parchment paper, then sprinkle them generously with the spice mixture.
5. Bake for about 20 minutes, tossing once or twice so that they bake evenly.
6. Sprinkle with chopped chives if desired.
