This refreshing, immune-boosting salad is so simple and is sure to lift any hint of the winter blues. With it’s eye-popping colors and bright flavors, it carries a healthy dose of bioflavonoids to help out your body’s mood-enhancing hormones. Leave on some of the pith and benefit from it’s load of soluble fiber and antioxidants. Feel free to mix and match any citrus fruits you find in your market’s produce section for your own version.

Ingredients

  • 2 Organic Grapefruits
  • 1 Organic Navel Orange
  • 1 Organic Blood Orange
  • 3 Organic Clementines
  • Organic Pomegranate seeds
  • 8 each Organic Golden Berries
  • ¼ cup Organic Currants
  • 1 tablespoon Raw Honey
  • Mint for garnish
  • Pistachios for garnish

Preparation:

1. Cut off the tops and bottoms of your citrus fruits, then cut away the peel as you work your way around the edges.

2. Slice cross-sections of all the citrus fruits and arrange in a bowl, drizzle with honey and garnish with  pomegranate, golden berries, currants, salted pistachios and mint leaves.

3 .Enjoy immediately or wait…the flavors only get better after they mingle awhile in the refrigerator.
