Move over Vichyssoise… there is a new chilled super food soup in town! Chilled Avocado Verde is the perfect substitution for the age old classic! The heart of the soup comes from nutritionally packed avocados which also provide this tasty dish with a smooth and creamy texture. Smaller waistlines, lower BMIs and higher levels of good cholesterol are all traits of people who eat this tropical fruit regularly.
Ingredients
- 2 organic ripe avocados
- 2 cups free-range chicken stock
- 1/4 cup organic verde sauce
- sea salt to taste
Preparation
Peel avocados and place in blender or food processor with all ingredients. Blend until smooth. If mixture is too thick, add additional chicken stock. Serve chilled with cilantro, chopped tomatoes and sour cream if desired.
