Brighten up your Super Bowl menu with the summertime flavors of avocado, basil, and tomatoes. Replace the usual boring 7-layer dip with these delicious protein packed Deviled Eggs!
Ingredients
- 12 free-range eggs
- 1 organic avocado
- 2 TB cold-pressed avocado oil based mayo
- 1 TB finely chopped organic red onion
- Juice from 1/2 organic lemon
- Organic grape tomatoes for garnish
- Organic basil for garnish
- Course sea salt
Preparation
1. Peel 12 boiled eggs and cut in half lengthwise.
2. Put the yolks into a small mixing bowl and add avocado, mayo, onion and lemon juice.
3. Smash with a fork until mixed and slightly chunky.
4. Fill each egg with the mixture and top with tomatoes and basil.
5. Sprinkle with course sea salt to taste.
