Bagel lovers, rejoice! We have a keto version of one of your favorites that even the most discerning bagel connoisseurs will love. This very low-carb bagel makes a perfect snack between meals, or it can be stacked with your favorites as a more substantial sandwich.
Ingredients
- 2 cups shredded mozzarella
- 1 cup shredded asiago
- 1/4 cup cream cheese
- 2 free-range eggs
- 1 1/2 cup organic almond flour
- 1 TBSP gluten-free baking powder
- 1/2 tsp sea salt
Preparation
1. Heat oven to 400. Mix together almond flour, eggs, baking powder and salt.
2. In a microwave-safe bowl, melt together the mozzarella and cream cheese. Combine the melted cheese mixture, almond flour mixture, and 3/4 cup shredded asiago. It will be very thick and doughy.
3. Working with your hands, shape into a ball and knead until ingredients are thoroughly combined. Break dough into 8 equal pieces, roll each piece into a ball, and poke holes in the middle to make bagel shapes.
4. Sprinkle remaining 1/4 cup of asiago cheese on the bagels. Place on a sheet pan and bake for 20 minutes or until golden brown.
5. Enjoy with your favorite bagel toppings. We loved it with sliced tomato, red onion, and arugula.
