No more pancake envy! Our gluten-free version of a Dutch Baby gives you extra protein and guilt-free sweetness to start off your weekend mornings right.
Ingredients
- 4 free-range eggs
- 1/2 cup organic 2% milk
- 1/4 cup organic cassava flour
- 2 tsp organic monk fruit sweetener
- 1/2 tsp organic vanilla extract
- 2 tbsp salted grass-fed butter
Preparation
1. Preheat oven and an 8-inch cast iron skillet to 425.
2. Whip eggs and milk in a blender until slightly frothy. Add dry ingredients and blend until smooth.
3. When oven is ready, melt the butter in the hot skillet, tilting to coat the sides.
4. Pour mixture into skillet and bake for 20 minutes until puffy and golden brown.
5. Serve with fresh berries and a sprinkling of monk fruit sweetener or maple syrup if desired.
