Is it spring or is it still winter? Warm up a cup of this flavorful and colorful soup on a brisk winter day or serve it chilled on a warm spring or summer afternoon. Either way, your taste buds are in for a treat and your body will thank you for all the nutrients!
Ingredients
(Serves 4)
- 2 large organic Golden Beets, roasted, chopped and peeled
- 1organic leek
- 1TB minced garlic
- 2 TB cold-pressed olive oil
- 1 cup organic vegetable stock
- 1 cup organic coconut milk
- Pinch of cayenne pepper
- 2 tablespoons maple syrup
- 1 tablespoon fresh organic lemon juice
- sea salt to taste
- crumbled goat cheese garnish
Preparation
1. Heat oil in large pot and add leeks and garlic.
2. Cook on medium heat until tender.
3. Add beets and cook about a minute.
4. Add stock and cook until beets are soft, about 20 minutes.
5. Stir in coconut milk, cayenne pepper, lemon juice, maple syrup, and salt.
6. Blend in batches in a traditional blender or with immersion blender in soup pot until smooth.
7. Serve warm or chilled.
8. Garnish with a generous amount of goat cheese.
