Fall would not be complete without caramel apples! Whether for a Halloween party or anytime fall treat, this version does without refined sugar and cream and instead uses potassium and fiber-rich dates for their sweetness. Tart green apples and buttery sweet figs are rounded out by crunchy salted nuts.
Ingredients
- 8 Organic green apples
- 2 cups Organic dates, pitted
- 3 TB Organic coconut oil, melted
- 3 TB butter, melted
- 1/4 tsp vanilla
- 1/4 tsp salt
- 1/3 cup warm water
- 1 cup Organic chopped salted nuts
- Popsicle Sticks
Preparation
1. Twist off the stems from the apples and press one popsicle stick into each apple.
2. In blender or food processor, add dates, coconut oil, butter, vanilla, salt and
water and blend until well-blended and smooth.
3. Scoop the sauce out of the processor and into a medium shallow bowl or pan.
4. Place the chopped nuts into another large shallow bowl.
5. Dip the apple into the caramel sauce and twist so that there’s a layer of caramel evenly covering the majority of the apple.
6. Hold over the pan of nuts and sprinkle nuts while rotating apple to cover layer of caramel. Place on a tray and serve!
