Plums are in season and make the perfect tweak to a traditional French Clafouti. The French are famous for their cherry Clafouti which is very similar in taste and texture to an American cobbler. Find some ripe and juicy plums and use them in this simple recipe that offers a wonderful late summer dessert.
Ingredients:
- 1 ¼ cups organic almond milk
- 2/3 cup organic coconut palm sugar
- 3 free-range eggs
- 1 tablespoon organic vanilla
- 1 teaspoon organic almond extract
- 1 pinch sea salt
- 1 cup all-purpose gluten-free flour
- 8 organic plums (halved and then cut into wedges)
- 1 tablespoon organic maple syrup
- 1 tablespoon salted grass-fed butter (melted)
Preparation:
- Prepare the plums and set aside.
- Preheat oven to 350 degrees
- In a mixing bowl, combine the almond milk, coconut sugar, eggs, vanilla, almond, salt, gluten free flour and melted butter.
- Mix well until there are no lumps.
- Spray an 8 inch cast iron skillet liberally with non-stick coating to ensure the Clafouti does not stick.
- Pour batter in to skillet up to halfway on the sides.
- Place the plums around the top of the batter.
- Place in oven and bake for 40 minutes (or until the center is firm and cooked through).
- Remove from oven and drizzle the maple syrup over the top.
- Allow to cool and refrigerate until ready to indulge.
Fun Tip: Serve room temperature or heat it up and serve it with a scoop of vanilla bean ice cream!
