Ingredients
- 1/2 medium organic watermelon
- 2 organic kiwis
- 1 can organic low-fat coconut milk
- 8 mint leaves
- Juice from 1 organic lime
Preparation
- Cut up watermelon into pieces that will fit into the blender.
- Add coconut milk, mint leaves and lime juice and blend until frothy.
- Pour into popsicle molds to just about a quarter inch from the fill line.
4. Peel kiwis and slice into thin cross-sections and slide two or three slices into each mold, pushing them down with a knife to the middle of the mold.
5. Freeze for 5-6 hours and enjoy!
