Heirloom tomatoes are in abundance this time of year and are the perfect companion for this old fashion classic lunch. Lean albacore is packed full of protein and with just enough avocado oil based mayonnaise it’s a simple, tasty, and healthy treat.
Ingredients
- 1 jumbo organic heirloom tomato, cut in half with a paring knife
- 6 oz wild-caught chunk albacore tuna in water
- 2 tablespoons organic avocado oil based mayonnaise
- 1 teaspoon Dijon mustard
- 2 tablespoons diced red onion
- 1 tablespoon diced fresh basil
- Sea salt and pepper to taste
Preparation
- Using a paring knife, remove the core of the tomato, then slice in half using a
crisscross motion to achieve a crown look. - In a mixing bowl, add all the remaining ingredients and mix very well.
- Season with salt and pepper to taste.
- Mound the tuna salad into the two tomatoes.
- Serve immediately.
