Summer time is when you can expect to see white asparagus pop up at your produce market. The asparagus is grown under mounds of dirt, eliminating sun light and its ability to turn green with chlorophyll. This is a healthy low calorie treat that is suitable for either a side dish or even a free standing appetizer.
Classically, white asparagus is dipped in hollandaise sauce and eaten with your fingers. This recipe pairs the pointy vegetable with a tasty basil and Dijon sauce that is prepared with organic avocado oil based mayonnaise.

Ingredients
- 1 bunch large organic white asparagus (1 inch of bottom end removed)
- 6 large leaves fresh basil
- 1 tablespoon Dijon mustard
- 1 tablespoon organic avocado oil based mayonnaise
- 1 tablespoon water
- 1 teaspoon fresh squeezed lemon
- Sea salt and pepper to taste
Preparation
1. In a 1 gallon soup pot, bring water to a boil.
2. Place asparagus in water and cook until al dente.
3. Remove and shock in ice water to halt the cooking process.
4. Set aside in fridge until ready to serve.
5. Place the basil, Dijon, mayonnaise, water, and lemon in a blender and pulse until very smooth.
6. Season with sea salt and pepper to taste.
