This side dish makes a perfect accompaniment to virtually any entrée, including grass-fed lamb, grass-fed beef, free-range chicken, and wild-caught seafood. It’s also a fabulous vegetarian option for our non-meat eaters.

Corn quite often receives a bad rap because of by-products such as corn syrup. Corn is also calorie rich, and many in Western societies associate corn with weight gain. However, it is this same calorie rich component which makes corn such a vital staple in the survival of many agricultural-based nations. Fresh, organic corn off the husk has many health benefits which include controlling diabetes, prevention of heart ailments, lowering hypertension and prevention of neural-tube defects at birth. Corn is one of the most popular cereals in the world and forms the staple food in many countries, including the United States and many African countries. Organic corn not only provides the necessary calories for healthy, daily metabolism, but is also a rich source of vitamins A, B, E and many minerals. Its high fiber content ensures that it plays a significant role in the prevention of digestive ailments like constipation and hemorrhoids as well as colorectal cancer. The antioxidants present in corn also act as anti-carcinogenic agents and prevent Alzheimer’s disease.

Ingredients

  • 4 ears corn
  • 15oz can coconut milk
  • 3 cloves garlic
  • 6 large leaves basil
  • Sea salt and pepper to taste

Preparation

  1. Shuck the corn (save the cobs) and place the kernels in a sauce pot.
  2. Add the coconut milk, garlic, and the bare corn cobs.
  3. Simmer gently until corn is tender and the liquid is reduced by half.
  4. Pour half the contents into a blender, add the basil, and puree until smooth.
  5. Pour the puree back into the sauce pot.
  6. Season with sea salt and pepper to taste.
