Hmmm, the power of cheese? If you’re looking for a low-carb, high protein light summer entrée to complement your sets of dumbbell curls and leg extensions, look no further than a good ole fashion tomato mozzarella salad.
The mozzarella is very high in protein (18g in this single serve recipe), and is packed full of calcium.
Basil packs a wallop of nutritious benefits, including being a very good source of vitamin A (through its concentration of carotenoids such as beta-carotene). The beta-carotene found in basil may help to lessen the progression of free radical damage. The list goes on, as basil is also a good source of magnesium, an excellent source of vitamin K and manganese, a very good source of copper and vitamin C, and a good source of calcium, iron, folate and omega-3 fatty acids.

Tomato Basil & Mozzarella Tower Ingredients (1 serving)
- 1 Large vine ripened, organic tomato, cored, and cut into 3 thick slices
- 2 Slices fresh mozzarella, ¼ inch thick
- 4 fresh basil leaves
- 1 tablespoons virgin olive oil, as needed
- 1 teaspoon balsamic vinegar
- Sea salt and cracked black pepper to taste
Preparation
- Lay the tomatoes and mozzarella flat on a prep area (without any overlapping).
- Season the pieces with the sea salt and cracked black pepper.
- To construct the tower, place a tomato slice down first in the center of a plate.
- Next place a slice of mozzarella, alternating with the remaining pieces.
- Drizzle the olive oil and balsamic around the plate.
- Sprinkle the top with a dash of sea salt and cracked black pepper.
- Chiffonade (slice thinly) 3 leaves of the basil and spread around the plate.
- Garnish the top with 1 full basil leaf.
- Enjoy!
