This quick and easy keto mug cake is the perfect dessert for a cozy night by the fire. With festive flavors like real vanilla and fresh citrus, you’ll want to make these for holiday parties and everyday dinners alike.
Ingredients

- 2 TB salted grass-fed butter
- 1/2 cup organic almond flour
- 2 TB organic coconut flour
- 3-4 TB monk fruit sweetener
- 1 TB fresh squeezed citrus juice (blood orange or grapefruit)
- 1 tsp baking powder
- 2 large free-range eggs
- 1/4 tsp cardamom
- 1/2 vanilla bean
Preparation
1. Divide butter in half and melt in 2 mugs or ramekins in microwave. Be careful not to burn or overheat.

2. Slit vanilla bean in half lengthwise and scrape out the insides with a spoon. In medium bowl, mix vanilla and all other ingredients together.

3. Divide evenly into two ramekins and microwave for 1 1/2 -2 minutes. Cake will rise and should be a bit gooey. It will be dry if overcooked.

4. Top with coconut cream and sliced almonds, if desired. Enjoy immediately!
