Miss hot cereal for breakfast but avoiding the carbs? This grain-free paleo porridge is just the thing to bring the warmth back into your mornings while loading you up with healthy fats and lasting energy. The Instant Pot makes this recipe quick and easy, but it can also be made on the stovetop.
Ingredients
- 1/2 cup raw cashews
- 1/2 cup raw pecans
- 1/2 cup shredded organic coconut
- 2 TB raw pumpkin seeds
- 2 TB hemp seeds
- 1/2 vanilla bean
- 1/4 tsp organic cinnamon
- 1 tsp monk fruit sweetener
- 1/4 tsp sea salt
- 1 1/4 cup water
Preparation
1. Place all nuts and seeds in blender to chop roughly.
2. Place chopped mixture into Instant Pot with water, cinnamon, vanilla, sweetener and salt. Stir a bit to combine.
3. Cook on pressure setting for 5 minutes.
4. Garnish with your choice of ghee, pomegranate or pumpkin seeds. Enjoy immediately.
