The tastes of summer shine in this refreshing, healthy treat! The sweetness of the basil and Vidalia onion combine perfectly with the watermelon to make this a satisfying appetizer or even a wonderful after dinner treat!
Ingredients
- ½ seedless watermelon
- ½ organic Vidalia onion (sliced thin)
- ¼ cup crumbled goat feta
- 1 bunch fresh organic basil (sliced in thin strips)
- 1 teaspoon organic balsamic vinegar (to be drizzled)
Preparation
1. Slice the watermelon into triangle wedges.
2. Top each wedge with thinly sliced onion, crumbled goat feta and fresh basil.
3. Drizzle the balsamic vinegar over the top.
4. Enjoy immediately!
