These bars are loaded with power foods that will keep you fueled to handle anything your day can throw at you. An abundance of nuts and seeds provide vitamins, minerals, protein, fiber-filled carbohydrates and healthy fats that fight inflammation and support a healthy brain and heart.

Peanut Butter Maple Superhero Bars

Ingredients

  • ½ cup roasted almond
  • 2 tablespoons hemp seeds
  • ½ cup toasted sesame seeds
  • ½ cup raw pumpkin seeds
  • ½ cup roasted walnuts
  • 4 tablespoons natural peanut butter flour
  • ½ cup cacao nibs
  • ½ cup dried goji berries
  • 3 tablespoons cacao powder
  • ½ cup shredded coconut
  • 16 pitted dates
  • 2 tablespoon Manuka honey
  • 2 tablespoon Maple syrup
  • 2 teaspoon salt
  • Cold water as needed for consistency

Preparation

  • In a cast iron skillet, melt the honey and maple syrup and add the dates
  • Mash the dates, set aside
  • In a food processor, add all the dry ingredients
  • Pulse until all ingredients are mixed well
  • Scrape sides of processor with plastic spatula as needed to everything is incorporated
  • Add the date mixture and continue to pulse until the ingredients roll on the side of the processor bowl.
  • Scrape the sides with a spatula and pulse a few more times, making sure all ingredients are blended well.
  • Pinch a small amount of mixture in your hand to see if it holds a good solid form. If it’s too dry and crumbles, add a few drops of water until you achieve the proper consistency.

Finishing them:

  • Cover the inside of a mini loaf pan (2.5” x 5” x 3”H) with plastic film wrap
  • Press the ingredients into the pan FIRMLY
  • Refrigerate for one hour, then remove and slice into 8- ¼” slices
