Enjoy Brussels Sprouts! These mini cabbage looking vegetables are a rich sources dietary fiber, vitamins, minerals, and antioxidants. Just a hint of brown grass-fed butter adds an abundance of flavor when mixed with the olive oil and fresh lemon!
Roasted Brussels Sprouts Ingredients (2 servings)
- ½ lb Brussels sprouts
- 1 tablespoon grated Parmesan
- 1 tablespoon fresh squeezed lemon juice
- 1 teaspoon salted grass-fed butter
- 1 tablespoon olive oil
- Salt and pepper to taste
Preparation
- Preheat oven to 450 degrees.
- Remove the steam from Brussels sprouts.
- Cut the Brussels sprouts in half.
- Toss the sprouts in the tablespoon of olive oil and place in a cast iron dish, then place in the hot oven for 8 minutes.
- Remove the sprouts and add the Parmesan, lemon juice, and grass-fed butter.
- Season with salt and black pepper.
- Place back in the oven for 4 more minutes.
- Remove and serve immediately.
