Mediterranean Turkey Meatballs with Goat Feta & Greek Yogurt Dipping Sauce

Enjoy these meatballs as an appetizer, hors d’ oeuvre or entrée. Lean organic, free-range ground turkey provides an excellent source of protein. While the Greek yogurt dipping sauce – aside from adding extra protein – is packed with good bacteria in the form of ”probiotics”, which are essential for a healthy digestive tract. The added mint soothes your stomach by assisting in digestion too!

Mediterranean Turkey Meatballs Ingredients

  • 1# organic, free-range ground turkey
  • 1 free-range egg
  • 1 cup gluten-free bread crumbs
  • 1 tablespoon fresh chopped oregano
  • 1 medium white onion, sliced thin and caramelized
  • 1 tablespoon minced sun-dried tomato
  • 1 teaspoon minced garlic

Preparation

  • Preheat oven to 425 degrees.
  • Add the above ingredients in a mixing bowl.
  • Mix well, then form 2″ meatballs.
  • Place on a roasting tray, and bake in the oven for 12-14 minutes (make sure they’re cooked all the way through).
  • Serve immediately.

Note: If you choose to serve at a later time, the meatballs will need to be reheated to a minimum of 165 degrees before serving.

Goat Feta & Greek Yogurt Dipping Sauce Ingredients

  • 1 cup Greek yogurt
  • 1 tablespoon fresh squeezed lemon
  • 1 pinch cayenne pepper
  • ½ cup peeled and diced English cucumber
  • 1 tablespoon minced fresh mint
  • 2 tablespoon crumbled goat milk feta
  • Sea salt and pepper to taste

Preparation

  • Place all ingredients in a mixing bowl and blend well.
  • Serve immediately with the meatballs or cover and refrigerate up to 3 days.

Note: If you choose to refrigerate, you’ll need to stir the yogurt mixture before serving.
