Lemon-Almond Zoodle Salad

Zucchini noodles or “zoodles” make the perfect base for a low-carb side that can be prepared quickly. A lemon-almond vinaigrette adds fresh flavor and heart-healthy monounsaturated fats. Combine this salad with your choice of protein and you’ve got an easy keto-friendly meal ready in just a few minutes!

Ingredients

  • 1 cup raw organic zucchini noodles
  • 1 medium organic radish, sliced thin
  • 1 TB freshly squeezed lemon juice
  • 2 TB almond oil
  • 1 TB sliced almonds
  • Course sea salt and pepper

Preparation

1. Place zucchini noodles, sliced radishes, lemon zest, lemon juice, and oil in a serving bowl and toss well.

2. Season with salt and pepper and top with sliced almonds. Serve cold with your choice of protein to make a complete low-carb, keto-friendly meal.
